Ireland, here we come!

…..we bought our tickets yesterday

We’re really hoping that our son will be able to meet the Irish side of the family. Maybe we should have checked with the family before we booked our flight but we had to coordinate our time in Ireland with our son’s conference in Dublin. Well actually it’s his girlfriend’s conference but that’s neither here nor there. They will be arriving on the 14th of July and leaving the 21st and 22nd. Our son is staying one extra day to spend a little more time with us.

We will land in Dublin on the 12th and will be leaving on the 25th. We’re not sure where we’re staying but our son and his girlfriend have booked a room at a hotel. We don’t want to burden anyone so we’re in the process of checking out AirBnB.

We’re hoping to take in some art galleries. Maybe some of my Irish followers can suggest a gallery or two. We’re definitely going to check out the Royal Hibernian Academy, the National Gallery of Ireland, the Museum of Natural History and the Irish Museum of Modern Art.

It doesn’t look like we’re going to get over to Germany on this trip. Sorry Philipp. My family will have to wait until next year before we can visit. We’re looking forward to catching up with the Irish cousins. Hopefully some of them will be in town when we’re there.

My Son…..The Next Jamie Oliver?

…….you decide

My son lives in the Netherlands, so whenever he posts anything on Facebook I have to check it out. Today I came across a video that he posted on YouTube. I’m not sure what he’s cooking but he does seem to have a flair for the flambé.

My entire family seems to have the cooking gene. My father loved to cook and for a short time he and my mother had their own catering business. For 17 years I taught Family Studies and demonstrated cooking techniques to my young students. When our youngest daughter expressed an interest in becoming a chef my husband supported her by cooking along side her and together they experimented with new recipes and techniques. Even after she decided that cooking was not what she wanted to pursue as a career, my husband continued to play in the kitchen and to this day he still prepares most of our meals.

Even though she decided not to cook for a living, my daughter and her husband are both foodies and they love to entertain and prepare elaborate and interesting dishes for family and friends. My oldest daughter is also very capable in the kitchen and both her and her partner have prepared some memorable meals and enjoy competing in cook-offs that J’s family hosts on a regular basis.

Our son has lived on his own for quite awhile and is basically a self-taught cook. He has shared some very tasty dishes with us when he visits and he isn’t afraid to try new and sometimes ‘dangerous’ cooking techniques, as you will see in the video. Take note of the paper towel roll behind the stove….could have been a bit of a disaster. As my husband said upon viewing the video, “That is so B…..”

My Missing Husband

….I imagined the worst

The school day had barely begun. I was in the library getting ready for my first class when AM paged me from the office. My neighbour was on the phone and had our dog, Frances, in her house. K was nowhere to be found. I had the call transferred to my office and spoke directly to N. Apparently she found Frances sitting on the front lawn and she was quite upset.

My neighbour on the north side of my house, L,  got into her car and drove around the neighbourhood looking for my husband. While I was talking to N (my neighbour on the south side of my house) L returned and hadn’t found my husband. I described K’s normal walking/running route to N and how she could get Frances into our house. I got off the phone and waited for her to call me back. I waited and waited and waited.

It seemed like forever but in reality it was only 15 minutes. My colleagues encouraged me to drive home to find out what was happening. When I got in the car and started on the short trip home (15minutes) I started to think the worst. What if he’d fallen down the rocky edge by the lake? Maybe he’d suffered a heart attack and was lying on a path less travelled. I didn’t know what to expect when I got home.

Half way home my phone rang. It was my husband. He was fine, just a little shaken up for having lost Frances. He let her off the leash while he ran along the lake and normally she runs along side him and occasionally checks out a path here and there but always pops back up and joins him.

For some reason, today Frances lost track of K and when she didn’t see him she ran home. K thought that she had passed him at some point so he turned around and ran back to where the path ended. He found some other dog walkers and they tried to help him find Frances. When he couldn’t find her he was beside himself with worry. He finally decided to run home.

As he got closer to the house he could hear her barking. He found my two neighbours outside the house and Frances was already inside. Needless to say K was very relieved. The problem was that at this moment in time I didn’t know that he was okay.

Did he call me right away to let me know he was home? No! He went back to the park to let others know that the dog was safe and sound at home. When he got back home the second time he called the school but I had already left. He told me later, very apologetically, that it had never occurred to him that I would be worried about him. Hmmmm! What can I say? I love him and I’m relieved that he’s okay.

The Best Mother’s Day

….despite the crazy weather

Spending time with my adult children is the best way to celebrate Mother’s Day. Unfortunately this year two of my three children are out of the country so having them all together was impossible. The day, however, was close to perfect.

It started with breakfast in bed, made lovingly by my husband; strawberries and yogurt, a feta and spinach omelet, bacon, toasted baguette and great coffee. Later in the morning I got a long distance phone call from my son who lives in Rotterdam. It was so nice hearing his voice and catching up on all the news in his life. I could have talked much longer but my husband and I were invited for a special lunch at our youngest daughter’s apartment.

Lunch at G’s and B’s place was relaxed and informal. We had a smorgasbord of cured meats, cheese, fresh bread, a citrus fennel salad and a rapini pesto with olives. After lunch the weather had cleared and the sun started to peak through the clouds so we decided to take the dogs, Lucy and Frances for a long walk through Sherwood Park.

The weather held out for our walk and actually started to warm up. Earlier in the day we experienced rain showers, gusty winds, cold temperatures and on the drive to the apartment we drove through a torrent of hail. When we returned to the apartment we stopped at Dufflet’s (situated just below the apartment) to pick up a couple of tarts to share and enjoy with our coffee.

On the drive home the weather changed again. The temperature dropped, the wind picked  up and it rained heavily. Just before arriving home it started to hail again and people on the street were covering their faces and running to find some kind of cover.

When we arrived home I got back in my car and went shopping. I needed to buy some things for school but that particular store closed as I drove up. At that point I decided to check out Marshall’s and boy am I glad I did. I needed a new spring coat that I could wear with dresses and skirts. I found that perfect coat plus 2 skirts, a short one and a long one and 3 summer tops.

When I got home my oldest daughter ‘skyped’ me from Argentina. Like her brother it was so nice to hear her voice but also to see her face. We had a few problems with the video portion of our exchange and we had a couple of laughs when the screen froze on a silly expression or when it started to loop over and over again. My day was perfect. I had a special moment with each of my children. Thank you, all! Love you!

Two Cents Tuesday Challenge: Heritage

…..precious gifts from the past

My parents and grandparents lost much during the WWII. When they escaped from the east they literally could only take what they could carry on their backs. Consequently my family has very few family heirlooms. My husband’s mother came to Canada from Ireland as a war bride. She came to this country with a suitcase of clothes and a few wedding gifts from her family.

Over the years I’ve collected a few items from the two families. When I got married my grandmother came over from Germany and gifted us one of the few items that they had saved from their home in Magdeburgh after the war. It was a lovely blue cut glass carafe.

From the time I was a little girl I remember a very old silver serving spoon that my mother used all the time. No one in the family wanted it and I was happy to adopt it. The date stamped on it is 1909 and it’s got a dent in the bowl. I love it and use it regularly.

My mother-in-law loved her tea set and when she passed on I inherited it, along with her silverware and a couple of quirky teapots. My oldest daughter helped herself to the teapots and both my daughters inherited some individual cup and saucer sets.

Photographs also didn’t survive the war. There are a few of my father’s family but my sisters are the proud owners of these tidbits of our family history. My husband’s family on his father’s side who have lived in Canada for over a hundred years have some wonderful photographs of his grandfather and his great grandparents that we have also inherited.

My 300th Post and A Great Day After All

…. but not because of the weather

My 2.2k running route

After walking 1k this morning I started to run. I hadn’t planned on running, in fact I haven’t been able to run because of my cold. I’m not sure if it was the rain or what but something spurred me on to start running and I kept running and running. I didn’t stop until I got home. I felt good the whole time and I think I could probably have gone farther but I decided that it probably wasn’t a good idea to push myself much more than I already had.

One year ago I could barely run 50 metres and I remember feeling like a bowl of Jello. Today it felt completely natural and I wasn’t the least bit self conscious about how I appeared in public. I’m not fast but I’ll work on my speed after I can run 5k without stopping. I’m almost half way there now. It’s been 8 hours since my run and I still feel good, no sore muscles or aching joints.

After our walk/run my husband and I picked up our daughter and her partner and headed over to The Junction. It was recently renamed The Junction Triangle but I haven’t heard anyone use the new name. We parked the car and checked out the old record store, the art store, Articulations, and then we crossed the street to The Sweet Potato. We picked up some kale, avocado, almond milk and a few other healthy foods.

There is a new restaurant that’s opened in the Junction and we had heard great things about it so we headed over there to get some lunch. The restaurant is called 3030 which also happens to be address on Dundas St. W.. When we got there they were serving brunch and we each chose different items off the menu. My choice was a spinach, proscutto and bacon rotolo topped with a sweet tomato chutney. It was delicious. It’s basically an omelette that is filled with the ingredients listed above and then rolled,sliced and baked in the oven.
After lunch we continued to head west along Dundas and took in some more of the sights and other little businesses. I’ll post more photographs of our great day tomorrow.

a site for reflecting on my past, an experiment with writing stories and prose, a place to share my new hobby of photography, a gallery for my art work and the work of my students, a cookbook of recipes and a journal to experience and share what makes me happy.

Blogging has kept me on track with my new fitness and eating journey. I’ve never felt better (not counting this cold I’m battling) and I think I look better. I’ve never been happier with myself than I am now. I feel that life has so much more to offer and for me to experience. I look forward to each new day and can’t wait to see where it takes me.

I’ve met the nicest people from all over the world. Thank you to all of you who have liked and commented on my posts. You have no idea how much joy I get from hearing from you. You lift me up when I’m not feeling well or when I’m down in the dumps and you honour me with your compliments and awards. I hope some day to be able to meet some of you when I start to travel more after I retire and I hope if you come to Toronto you’ll look me up and we can meet for coffee or share a meal.

Before the end of the month I hope to reach 10 000 views. The month has started off slowly but that is my own fault. I haven’t had much energy or interesting things to blog about because of my cold but starting today I’m going to try to publish every day. There are 23 days left so that means I need about 30 views a day to reach my goal. Last month I averaged 42 views a day so 30 I think is very doable.

I’m delighted with how many people are following me on mamacormier. I never imagined in my wildest dreams that so many people would want to read what I have to say. Just before the New Year I put out a plea to reach 200 followers and a few kind people made that dream come true. Since then I’ve been steadily getting new followers and am currently sitting at 281. Before the end of the month I’d love to reach 300. Any takers?

So where do I go from here? Well, I’m definitely going to continue with my weight loss and fitness journey. One thing that I’ve learned is that this journey is and will be a life long commitment. I want to live a long and healthy life. I don’t want to live my last 10 years as a statistic and be a burden on society. I have too much I want to do and accomplish in life.

I love the challenges that wordpress and other bloggers put out there so I know that I will continue to participate in some of them, especially the photography ones. I’ll also continue to share the art that my students create and hopefully I’ll find more time to create more of my own art. Who knows, maybe something new will cross my path and I’ll share that with you as well. I can’t seem to focus on any one thing so I tend to do it all. That’s just the way I am. I wouldn’t be happy any other way.

Sunny and Warmer

…. it seems like everybody around the world is commenting on the unusual weather

Yesterday was the first day that we ventured out onto the deck to enjoy the sun after our delicious Easter lunch. We decided to do dessert and coffee outside. As you can see from the photographs the temperature wasn’t all that warm and we donned our coats, vests and sweaters but the sun felt good on our faces as we tried to absorb some of that natural vitamin D.

Yesterday we also skyped our son in Rotterdam and spoke with him for a good 30 minutes or more. It was a video call so we showed him the table setting, and the food as it was coming out of the oven and he showed us the new blinds he put up in his apartment and then he went out onto his mini balcony and showed us his view of the street. Isn’t technology wonderful?

One of the things that B mentioned was the bitter cold they were experiencing and how the winds were relentless all week in the Netherlands. My cousin in Germany also told me about the unusual amount of snow they were getting for this time of year and my blogging friends in Dublin and Prenzlau also commented on the cold, snow and wind. None of this is that unusual for those of us that live in Canada or the NE sections of the U.S.A. but in Europe it’s a big deal because they’re usually well into spring by now with the flowers blooming everywhere.

And speaking about blooming, the mini daffodils that I bought for the table started to open today. I think one of my favourite things about Easter is the selection of all the wonderful flowers that you can purchase from the market this time of year. I treated myself to more tulips today.

When the tulips open up they should be a beautiful pink colour. The only other thing that would make this scenario perfect would be the addition of some pussy willows. I’m on a mission. Till tomorrow. Enjoy the day, wherever you are, regardless of the weather.

Celebrating Easter With a Beautiful Table, Great Food and Family

…. the only day we could get most of the family together was for Good Friday

When your children grow up and leave the nest to begin their lives with their own partners getting together for the holidays can sometimes be difficult. Our children now have two families to consider when planning where their time will be spent for celebrations. This year Easter Sunday coincided with a special anniversary and a baby shower was being hosted on Saturday. Consequently the only day that suited everyone involved was Good Friday.

I’ve been down for the count all week with a viral respiratory infection and have spent much of my time searching for easy fun ways to decorate our table for our Easter lunch. I didn’t have to go far or search too long before I found inspiration in the form of paper tulip dishes that would greet each guest as they sat down to eat. The idea came from my daughter’s wedding blog over at Uschi and Kay

I don’t know if I’ve ever mentioned it before but my husband is a great cook and he planned, shopped and prepared the entire meal by himself. Last night he prepared the Ham, Peas and Rice Stuffed Phyllo Logs and Fresh Strawberry Pie. Today he continued prepping the Melon and Grape Salad with Basil Yogurt, baked the logs and prepared the Asparagus and Fresh Beans.

At the end of the day each of my daughters took home one of the mini daffodil plants, the paper tulip dish and a slew of chocolate and candy Easter Eggs. It was a lovely day. We had a few laughs, we talked to our son in Rotterdam via Skype, we sat on the deck and I didn’t cough too much. Happy, happy, happy!

 

Traditional Irish Soda Bread

…. this bread made everyone happy today 

Happiness Files – Day 8

I was prepared to add raisin and currents to my bread today until I read that traditional Irish soda bread has only 5 ingredients: flour, baking soda, sugar, salt and buttermilk

4 cups (1000 mL) all-purpose flour

1tablespoon (15 mL) sugar

1 tsp. (5 mL) salt

1 tsp. (5 mL) baking soda

2 cups (500 mL) buttermilk

P10007451. Thoroughly mix all the dry ingredients together in a large bowl. Nothing is worse than biting into a clump of baking soda. Make a well in the middle.

P1000746 P10007482. Pour the buttermilk into the centre and then using your hands move the flour into the liquid and mix together until all the ingredients come together.

3. Using your hands gently knead the dough a couple of times until you form a nice smooth ball.

4. Place the loaf on a lightly greased cookie sheet and with a sharp knife cut a deep cross through the middle of the loaf.

5. Bake the bread in a 425 degree oven for 35 minutes. Cool on a rack.

6. Slice and serve with butter.

Dinner today consisted of a beet, wilted greens, and feta salad. I used the beets and steamed greens that I prepared last night. I added feta cheese, a splash of olive oil and freshly ground pepper and salt. I felt like I was in a fancy restaurant enjoying a gourmet salad.

The main course was the Guinness Irish stew and a dollop of champ (mashed potatoes with sliced green onions) that my husband made. It was amazing.

Before dessert we took the dogs, Lucy and Frances, for a nice long walk to help burn some of the calories from the stew and make room our fresh berries and cream and hot steaming coffee.

DSCN0004Here are 5 more reasons why I had a happy day today. Bringing people who love each other together to enjoy a meal, regardless of the occasion, is always a happy moment. Sharing food with people who appreciate your efforts is very rewarding. Hope you had a lovely day, whether you were celebrating St. Patrick’s Day or just enjoying a regular Sunday.
